The grape berries gradually grow in size, and its colour varies from bright green to pale red, for red varieties, and light yellow for white varieties. At the beginning of summer, it is convenient to perform the "debudding," "cane pruning" and "tipping" to maintain the vine in all its vigour. The veraison occurs in late August, with the grape berries changing colours to an intense blue in maturation. Because of the weather of our area, the grapes undergo an excellent process of maturation under high temperatures together with a localised support irrigation system, i.e., a drip system.
