Carolus, the CUEVAS flagship wine, is only produced with the best harvests with more than 24 months of aging and made with Chardonnay, Airen and Macabeo varieties fermented in American oak barrels for 30 days. Ideal for enjoying at any time of day and going well with white meats, fish and seafood. Pale and bright yellow with a good release of very fine bubbles. Harmonic aromas with fruity flavours and fine pastries. The flavour is lively and fresh, delicate and smooth with a fine acidic structure.

It is one of the flagship products in our winery, result of its more than 18 months of ageing, and produced under strict quality criteria and careful detail. This CUEVAS wine is made with select grapes from our Macabeo, Airen and Chardonnay vineyards ideal for meat and fish. This wine has a yellow colour, clean and bright. Aromas of aging on a background of nuts with light toasted notes. The flavour has an excellent structure on the palate while retaining a fresh and soft background. .

Perfect for appetisers with seafood starters, paella, fideuá noodles, etc. This wine has a pale yellow colour and fine and persistent bubbles. Light flavours with an elegant and broad retronasal finish. Aromas filled with aromatic tones. It is a live and light CUEVA wine.

Sparkling Wine Carolus Gran Reserva

A Cuevas wine made using traditional methods with Sauvignon Blanc, Airen and Macabeo varieties from our vineyards. Intense and powerful while subtle and delicate this wine is endowed with great vinosity. In short, it is an aromatic and structured Cueva wine whose volume and persistence makes it ideal to go with a whole meal. Aged in stacks for a minimum of 36 months in caves, with manual rotation and disgorgement. The wine is ideal to go with a whole meal including Carpaccio, cured cheeses, smoked meats, seafood and any other kind of meat. It has a gold yellow colour with fine bubbles, with notes of pastries and dry and toasted nuts. Creamy and round, vinous, fresh acidity and an excellent integration of carbon.

Prepared with Pinot Noir and Grenache, making it an ideal CUEVAS wine for meat, salted fish and Japanese cuisine. This wine has a pink cherry colour, clean and bright. Delicate and intense aromas, enveloped in bakery and flowery memories. On the palate, the wine produces intense effervescence bubbles.
